My suggestion is to replace the "Reject single product load" checkbox with a list of product combinations that should be rejected at a ore sorting stations. For example, I want to reject loads of rock and dirt, and any loads carrying just rock and dirt, but any combination of ore and rock or ore and dirt or just ore is fine.

Dump stuff not needed nearby, I do it within the mining designation. By selecting what to dump you can chose what will get sorted and what will be dumped, even as mixed load.

It helps to dedicate a second control tower and declare transport rules between them, so no other vehicle will come over and starts dumping stuff from somewhere else.
