Based on the in-game description, if I'm understanding it right (I haven't actually messed with it much), the ore sorter will only accept loads which contain *only* materials it's allowed to sort, so that any plant must be set to accept all the materials that might possibly be mixed with the desired product, and you'll probably pretty much end up needing plants to cover every possible combination. This is obviously backward - it should accept any loads containing the products it can sort out at all, then return anything else as unsorted load at a universal output to be sorted somewhere else or dumped. In this way each facility is just responsible for removing its dedicated material types, which is more reasonable and realistic.
In case this is actually what happens, the explanatory tooltip for "products to support" is unhelpful.
Also, I'm assuming that unsorted material consisting entirely of products that are dumpable in some place can be dumped w/o sorting - if not, would make sense.
Ore sorter should work the other way around
It would be more fun if you will mine an "ore mix".
From a visual perspective you can see that there is iron / copper but when mining it it's a impure "ore mix" which has to be sorted out in the sorter.
Then you can sort out for instance iron and the rest will stay rock, dirt and ore mix.
Therefore it would be also very nice if the sorter has an input so you you can daisy chain the sorter.
What raven suggest also means you can put ore mix into containers, onto conveyer belts, move it around and sort or dump it whereevery you want. meaning you can also have a fixed big sorter location and only have to place a storage and belt at the digsites. No more destroying and rebuilding 12 ore sorters to be closer to the digsite.
Yeah, there's really no reason why excavator loads shouldn't work exactly the same way recyclables do, with the content tracked internally. Given that this system already exists for recyclables I would think it would make sense to repurpose it.
