I can't add a carriage to the train. It is logical that you can add carriages or trains to the train, why can't you do that? You have to scrap the entire train and build a new one, it is very poorly implemented.

You don't actually scrap train, it gets split into wagons, you can reuse them fully.
The problem is that 'scrap' button is misleading.
While true that you reuse wagons and engines, you are limited in how many you can hold. I agree with OP that we need an ability to just add a train, and it has to return to the depot to get its new wagon. The challenge I've seen is you can't scrap the existing train without creating a copy of it first, which adds the build to the queue before the existing wagons are "scrapped" or stored for reuse.
