Add adjustable intake limits to ore sorters

At the moment, ore sorters do not let players control how much of each ore they accept. Trucks simply dump whatever they are carrying into the sorter, and if one ore arrives in larger quantities than the others, it can dominate the sorter’s storage and prevent other ores from being processed properly.
There is also a related issue where, once a sorter is holding mostly one material, it may stop accepting that ore even though the sorter is not actually full. For example, a sorter that is mostly filled with iron may stop taking more iron despite still having unused capacity.
I suggest adding a setting to each ore sorter that lets players control the maximum intake for each material using percentage sliders. This would let players decide how much of the sorter’s capacity is reserved for each ore type.
For example, a player could set a sorter to accept:
50% iron and 50% copper, or
40% iron, 40% copper, and the remaining 20% split between rock, dirt, and sand.

What are the trucks supposed to do with the other materials in the truck?
It might create a situation where a truck has 2 Dirt or Copper Ore left over that it doesn't know what to do with.
