If you unassign a resource from an ore sorter you lose all that resource. (Very handy when it's blocked with dirt/rock...)
Unassign a resource from an ore sorter and any of it in still in the sorter will simply vanish.

The resources do not disappear. They get moved to a suitable storage. If there is none (or full), the rest goes to the shipyard.
As you've observed, this can be misused (esp. early game), to save on truck transports.
I abuse this all the time myself. it could easily go into the building storage (like after upgrading a building or the vehicle depot returned parts instead -- and/or cost some unity to remove
Unassigned products do not vanish: they move to a suitable storage, or to the shipyard if no storage has room.
