Might be intended behaviour but it is very confusing.
When I have an ore sorter which has "automated assignment".
Then "remove" the assignment of a specific product to the ore sorter.
The automatic process reassigns that product to the ore sorter again.
So I cannot have an automatic ore sorter disallowed to get a specific product.
That is working as expected. If you need to manage the assignments, you need to disable the auto-assign feature, which is often expected. The auto-assign feature mainly aims to unblock beginners
Maybe a toggle like 'Disable logistics for newly placed buildings' would help, because after you're not novice, you have to disable it manually on every new sorter placed
