The Ore Sorting Plant is not updating the assigned output slots live (as can be seen in the screenshot). You have to close the inventory screen and re-open it to get the output slots to update.
I don't think this is strictly a bug but it sure feels like it could be solved in a better way. That issue has been around for a hot minute too. So maybe it's time to tackle it?
Honestly I don't care so much about the icons indicating the material the output has
but more so an indication of the associated letter on the output slot. A rough concept draft can be seen in the second screen shot.
