If you go to a cargo depot's module, and go to contracts, you can instead go to a quick trade menu, instead of having to select an individual village, like on the world map, which the trading dock just sends you to. I suggest adding this menu to the trading dock.

You can also press F3 to open the trade menu or press the button in the hotbar. Though I agree if you click on the button in the trade dock, you should get the quick trade offers and not be sent to the world map to find the settlement that has the trade you're looking for.
I completely forgot about all 5 of the icons at the right side of the bottom toolbar, how embarrassing. I'd never even used 4 of them, so that's probably why. They should probably be mentioned in a tutorial.
